Our first bottling of our Solera Sour Wild Project this year (2023). Beautiful German Riesling grapes in perfect combination with our matured Wild ale.
We got hold of some beautiful German Riesling grapes which we put into carbonic maceration, a process that is common in winemaking. The aim of this process is to produce fresh, fruit-forward, low-tannin wines. Carbonic maceration uses whole clusters of grapes in a sealed, carbon dioxide-filled tank to start fermentation within each grape.
After this, we added our matured wild ale to the fermented grapes to create the perfect synergy
